Garlic Smashed Cheddar Mashed Potatoes
Ingredients
- Idaho or Russet Potatoes
- Clove of garlic
- Tbs Olive Oil
- Fresh Basil
- Salt and Pepper
- Stick of butter*
- 1/4 Cup of Milk*
- Splash of Half and Half*
- 1/2 cup of Shredded Cheddar Cheese*
- Bread Crumbs
*You can use more or less, depending on your diet or what you prefer. You can also replace with vegan versions, soy milk..etc.
Prep
- Peel potatoes and dice them
- Boil potatoes in a large pot
- Place olive oil, clove of garlic with pinch of salt in the oven to roast
- Leave in oven at 325 degrees for about 15 minutes
- Once your potatoes are soft, use a potato masher or food mixer to mash potatoes for about 2 minutes
- Add softened 1/2 stick of butter (other half is for something else), milk and half and half.
- Once they have a creamy consistency, add the oven roasted garlic, salt and pepper and shredded cheese.
- Mix everything together and beat for another 5 minutes or until desired.
- Place potatoes in an oven safe pan
- Melt the other half of the stick of butter and add the bread crumbs to it
- Sprinkle on top of the potatoes
- Put pan in oven for another 15-20 minutes
- Take them out and let them cool, or if you’re me…DIG IN AND ENJOY!
